La Vaca Tapatía is a new taco truck in Cicero!
It is recognized as the big orange truck often located in the BP parking lot at 26th and Austin Boulevard. Pancho is the owner of La Vaca Tapatía. He answered some questions for the Pony Express News.
What’s your most popular taco so far?
“Our most popular taco is the taco de al pastor,” said Pancho.
Do you make your salsas and sauces in-house?
“Yes, we make our special green salsa in-house. We make it in a big container and pack it in small containers,” said Pancho.
Are there any regional or traditional taco styles you specialize in?
“Yes, we specialize in Tijuana-style tacos from my pueblo,” said Pancho.
Are there any hidden gems on the menu that people often overlook?
“The quesa birrias are a hidden gem on the menu that many people overlook, but they are one of the best,” said Pancho.
What is your story on how you started your business?
“So, ever since I was a little child, my mother would sell tacos in our pueblo in Tijuana, and many people loved them. Then, I came to the United States, inspired by my mother’s business, hoping people from the United States would love tacos,” said Pancho.
What’s your spiciest taco, and can I customize the heat level?
“We don’t have a certain spicy taco, but we do offer a spicy red salsa to add a kick to any taco,” said Pancho.
Cicero is not really known for having many taco trucks; La Vaca Tapatía is the most well-known around Morton East.
So, how do we feel about Pancho’s tacos?
“My favorite tacos are tacos de chorizo, but they have to be plain,” said Ricardo, a security guard at Morton East.
“My favorite tacos are tacos de lengua,” said Jose Huerta, a junior at Morton East.
“My favorite taco is de al pastor con cebolla y cilantro,” said Josua D., a senior at Morton East.
